Veggie Burgers

These great-tasting veggie burgers are made using tofu which helps to keep a consistency that holds them together. You can vary the ingredients, just change the carrots for say, finely-chopped mushrooms or aubergine for a variety of options.

  1. Place the onion, carrot, tofu, marmite, egg, herbs, salt and pepper into a bowl and stir until well mixed
  2. Add the breadcrumbs and mix well
  3. If the mixture is not stiff, add more breadcrumbs
  4. Form the mixture into burger-shaped portions - I use an old burger-press - easy to use and cheap
  5. Place a couple of teaspoons of olive oil in a griddle or frying pan over a medium heat
  6. Fry burgers for 10 minutes, turning every couple of minutes
  7. Serve with a side salad or in a bun with salad ingredients
  8. If you wish, you can store the burgers in the freezer and they keep well for a month or so
